Biography

Dr. Ammar Mohammed Hamood AL-Farga is Associate Professor in Department of Biochemistry, University of Jeddah, KSA. He is working on process development for a novel food. He holds a PhD in Food Science and Biochemistry from Jiangnan University Wuxi, China, where he worked on Physiochemical, Nutritional value and Antioxidant Characteristics of a novel food Alhydwan (Boerhavia elegana Choisy) Seed and its Application in some Food Products, the National Excellent Doctoral Dissertation Award Nomination of China, 2016. His research focuses on development for novel foods in an attempt to discover more innovative foods of high nutraceutical values that can be used in other food product systems. He has published various papers (50) in high impact factor international journals and her work is very well cited by researcher’s worldwide. He has Award of “Finding Future-star of Young Researchers Scheme”, 2016, He has also been awarded with various awards and honors’ including the Doctoral Fellowship, Wuxi, China. He published more than 90 scientific works. Two patents (Under review), Reviewer in more than 5 international journals as well as member of the editorial board of Several  indexed journals.

Biography

Dr. Tarek Morsy is a professor of Animal Nutrition at National Research Centre, Cairo, Egypt.  He received his B.S from Cairo University and his M.S. and PhD from Ain shams University before eventually becoming Researcher at the National Research Centre in 2005. After his twelve-year career as a researcher there, Dr. Tarek Morsy, granted a position as a professor in animal nutrition and dairy production in 2017 at National Research Centre. In addition to supervising on   graduate students, Dr. Tarek Morsy works as a scientific reviewer for many international journals and He contributed in many scientific projects. Dr. Tarek Morsy was selected as a member of the Permanent Scientific Committee of Research, Centers and   Institutes. He has participated in many scientific researches published in high impacted factor journals.

Biography

Dr Penny Comino is a course co-ordinator and lecturer in chemistry and food chemistry with the School of Agriculture and Food Sciences and the School of Chemistry and Molecular BioSciences. Dr. Comino has a primarily teaching focused role in the subjects CHEM2003, CHEM1100, CHEM1004 and FOOD7013, involving undergraduate and postgraduate (masters) students at St. Lucia and Gatton campuses. These subjects encompass core chemistry, nutrition, thermodynamics, engineering and chemistry analytical related content.
Dr. Comino gained her PhD (2014) under the supervision of Professor Mike Gidley, who is the Director of the Centre for Nutrition and Food Sciences (CNAFS) at the University of Queensland, Australia. Dr. Comino’s research centred around the characterization of dietary fibre, and its processing effects using in vitro studies.
Over the years, Dr. Comino has recently published several nutritionally related articles in prominent international peer reviewed journals.

Marc (maiden name Vlaic) Romina Alina has completed her Ph.D. (Agronomy) in 2015 at the University of Agricultural Sciences and Veterinary Medicine (UASVM) of Cluj-Napoca (Romania). She is PhD Eng., Lecturer and she is responsible for the research activity in the Vegetable food quality control, Rheology in the food industry,  Quality management systems and Food safety of the Faculty of Food Science and Technology,  UASVM Cluj-Napoca. She has published 36 research articles on the development of innovative food products and bioactive compound traceability during processing in reputed journals. She was responsible for 7 research projects and won 2 national awards and 42 international awards. Member in professional associations: Slow Food International; Association of Food Industry Specialists in Romania (ASIAR), from education, research and production; Association of Specialists in Milling and Baking in Romania.

Biography

Ana Barros Assistant Professor with habilitation at the Chemistry Department of the University of Trás-os-Montes and Alto Douro, in the field of Organic Chemistry, Food Chemistry and Food Analysis. Integrated member from the Centre for the Research and Technology of Agro-Environmental and Biological Sciences (CITAB), responsible for the Phytochemicals Laboratory, and Coordinator of the Agri-Food Quality Group.  Leader of the Thematic Line “Technology and innovation in the agri-food and forestry chains for a more competitive bioeconomy” and Director of the same Research Centre, since May 2017, rated with Very Good by the FCT’s evaluation panel.

Author of 70 international peer reviewed papers and holder of 8 national and international patents. Coordinator of one ON2 project as the principal investigator and more 15 projects as participant. Supervised 6 PhD theses and 40 Master’s theses. The current goals are linked to UNESCO codes: Biochemistry (2302), Analytical Chemistry (2301), Organic Chemistry (2306), Food Science and Technology (3309) and Nutrition (3206). The main lines of research are focus on:

– Synthesis and structural characterization by NMR of potentially bioactive phenolic compounds.

– Characterization and quantification of bioactive compounds of food matrices and by-products by HPLC.

– Evaluation of pre-harvest factors (species, variety, ripeness and agro-environmental factors) and post-harvest factors (agronomic, environmental, transport, storage or processing) in the content of bioactive phytochemicals.

– Evaluation of biological activity in vitro (antioxidant activity and capacity to modulate oxidative stress in cell models) of phytochemical constituents.

– Development of ingredients and functional foods based on the content of bioactive polyphenols available in the analyzed matrices.

– Use of infrared spectroscopy to determine the nutritional and phytochemical composition and as a technique for developing predictive models.

Dr. Surangna Jain has just completed her postdoctoral research from Mahidol University, Thailand. Her research mainly focused on the utilisation of modified rice starches for the formation of stable oil-in-water emulsions that were later used to develop different delivery systems for the encapsulation of lycopene. The in-vitro digestion behaviour of the different delivery systems were studied to ensure that controlled release of lycopene took place.

Dr. Surangna Jain gained her PhD (2016) under the supervision of Professor Anil Kumar Anal, who is the Head of Department of Food, Agriculture and Bioresources at Asian Institute of Technology, Thailand. Dr Jain’s research focused on developing green technology based methods for isolation of bioactive peptides from the eggshell membrane, a major food processing waste and their further applications.

Biography

The author received an honorable PhD in mathematics and majored in engineering at MIT.  He attended different universities over 17 years and studied seven academic disciplines.
He has spent 30,000 hours in endocrinology research with an emphasis in diabetes.  First, he studied six metabolic diseases and food nutrition from 2010 to 2013, then conducted his own diabetes research from 2014 to 2019.   His approach is “quantitative and precision medicine” based on mathematics, physics, optical and electronics physics, engineering modeling, wave theory, energy theory, signal processing, computer science, big data analytics, statistics, machine learning, and artificial intelligence.  His main focus is on preventive medicine using prediction tools.  He believes that the better the prediction, the more control you have.  Thus far, he has written, published, and presented more than 200 medical papers.

Dr. Seong-Hee Maria Ko received her doctoral degree from Dept. of Food Science and Nutrition, Sookmyung Women’s University, South Korea with a dissertation entitled “Effect of 8-hydroxydeoxyguanosine on obesity-associated metabolic changes in KKAy mice” in 2009 and received her mater degree from the same university with a dissertation entitled “A study of antioxidant action of some fruits and vegetables juices consumed commonly by Koreans” in 2003 and was instructed by Prof. Hyun-Sook Kim, Council member, International Union of Nutritional Science. She spent her junior researcher, senior researcher and post-doctor course in Dept. of Pharmacology, college of Medicine, Seoul National University, South Korea over 13 years under the instruction of Prof. Myung-Hee Chung. In 2007, she received the Seoul Science Fellowship from the Korean government and also was selected by the Korean government for Brain Korea 21 Scholarship in 2009.

Her main areas of interest are metabolism, oxidative stress, DNA repair, and immune function. She has published various of papers related to them and short details are as follows;

  • Involved in the metabolic disorder study of type 2 D.M and obesity in KKAy mice (type 2 diabetic obese mice)
  • Involved in the detection of urine 8-oxo- deoxyguanosine (8-OHdG) as an oxidative stress marker in diabetic rat using HPLC (high performance- liquid- chromatography)
  • Involved in the detection of neopterin, a marker of immune response, and 8-OH-dG, a marker of oxidative stress, correlate at high age as determined by automated simultaneous HPLC analysis of human urine
  • Involved in the study on the formation of 8-hydroxyguanine by gamma radiation cellular dysfunction, and role of repair enzyme (OGG1; 8-hydroxyguanine glycosylase) of oxidative DNA damage
  • Involved in comparison of the antioxidant activities of nine different fruits in human plasma performing the measurement of ROS level in human plasma

 

Her review paper, “Menopause-Associated Lipid Metabolic Disorders and Foods Beneficial for Postmenopausal Women” was selected as the most top downloaded paper (January – March in 2020). She teaches ‘Nutrition and cancer” and ‘Biotechnology’ for doctoral students in Sookmyung Women’s University and she is a head of Dept. of research and development, Ho-Youn Kim’s internal medicine clinic for Arthritis Rheumatism. She is working on autoimmune diseases that come from cytokine imbalances for obese people.

She speaks Korean, Japanese, English and Spanish. Thus, she has served as a translator for the Raphael Clinic that is a medical volunteer institute which has free medical service for foreign immigrant workers and refugees in South Korea. She was a Gabriel Prize Winner that is awarded to outstanding volunteers who have served more than 100 times at the Raphael Clinic (http://raphael.or.kr/en_US/). She loves to play the piano and the cello.
